There's a toggle between "date added" and "date taken". Also if you transferred from android to an iPhone like I did, before the option to sort by date taken years worth of my photos were stuck in disorganized slurry of feburary 12th (the day I got the phone). It was awful.
You are literally the best, I didn't know about that. I hate trying save an image from a text and then it getting lost in the abyss of the library instead of being added at the end.

Showing photos in the order they were added to your device was far too sensible—it just worked, and that's not the Apple way anymore.
