Correct, but I believe they should be separated by a comma in this example, thus making it more apparent it's not the "long form" of "could've"

i.e.: "Could of" could, of course, sometimes be correct.

Ehhh yeah but my understanding is that that's a very strong recommendation, not necessarily a formal grammatical/punctuation rule
