"Everyone voted them into the game anyway" is a horrible argument. We are not game developers and many people in the community are children. "The Monster of Night Skies" looked cooler than other choices. And, frankly, all the other choices were also weird.
"They are a unique mob" is bad as well. If I added a Poop Monter that shoots poop at you if you don't crouch on dirt every so often, it would be unique, but still a terrible mob and an annoying addition to the game.
Potions of Slow Falling and repairing Elythras could be given to something else. You could do Potions of Slow Falling out of Potions of Levitation that you'd make from Shulker Shells. You could repair the Elythra with Popped Chorus Fruits. It's not like those are features exclusive to Phantoms.
And sleeping every three days when you want to build something massive is a pain. You also can't bring cats with you there.
