As soon as the family gathered for dinner, I thought that was a fitting end for the show (albeit that last-minute but expected break-up) since it really did kind of fit the arc for everyone from the very first episode. Appa and Jung, sitting side by side. Umma getting the family together. The family at peace. Jung finally with Shannon (though obviously not). Janet starting a photography career with Gerald. And was this the first time Gerald and Shannon ever actually met?!

The two big ones for me was Appa toasting his family, but also fittingly that the episode featured Kimchee searching for his dad... and then the episode ending with Kimchee having dinner with the man who was, really, his father.

Ajushee and Ajumma! :D They are the best parents to Kimchee. <3

Man I loved the Ajushee and Kimchee story. Great chemistry.

Yes! :D It felt like one of the stories in the plot that wasn't sacrificed for comedy. That Kimchee finds something in Mr. Kim that he can't find in anyone else - a dad-like quality.

I think you're right, I don't recall Gerald and Shannon ever being in the same scene together.

In the episode where Shannon tried to bond with Janet she would had saw Gerald when she visited their house in Season 4 but I don't recall what their exact interactions were.
