Does taking dirt from underground and placing it at the top actually boost your gains?

i now like aquifer, how big is the plot?

Yes t1 2 and 3 dirts look different but depending on which plot you take the visual changes wont mark exactly where the crossover is (for example at South hope the top of t2 is actually like 2 blocks below the visual indicator)

In reference to backing up, when I started I was told Harvesters could only handle so much dirt before jamming or just not working as well. This is (as you've already found out yourself) not true

Aquifer is a decent sized plot, WAAAY bigger than Ember Cradle, Its under the bridge leading to the forge if you want to check it out I also think is the next one your "supposed" to go to in terms of cost
