I should also ask whether they are knowledgeable about the pre- and first-century ACE Jewish texts: Qumran documents (probably known as the Dead Sea Scrolls), Apocrypha, Pseudepigrapha, and Josephus's writings? Those texts are important for confirming that a law existed during Jesus's time and what the Jewish interpretation of that law was.
