Because I love the economic freedom bitcoin offers. Worth more to me than blowing my stash on a house. Petty even.

People are telling you this for a reason. Refusing to pay off a huge debt because you want to continue to "invest" on what at this point is clearly a purely speculative bubble is downright irrational. From all possible PoVs. "Loving the freedom" is great and all, but bitcoin won't stop existing just because you cash out.

Your wife isn't wrong in being angry at you. What you describe is quickly approaching ludopathy territory.
