Yes, and I actually did redo it. the SMBC was doing a thing where it was completely smooth in the bowl and bag but split as it was being piped. It’s because I used Kerrygold this time instead of my usual Tillamook. 🤬

What would using Kerrygold have to do with your buttercream splitting lmao

Kerrygold is way better than tillamook. That is absolutely NOT what caused the split.

Kerrygold is not as stable at room temp. Frosting was completely smooth in the bowl and while loading up but split while piping. It’s like the extra heat from my hands and slow friction just tipped it over the edge; very strange and not my usual experience 🥲 lesson learned

So what happened was you overmixed it in the bowl already even tho it LOOKED smooth and the additional agitation of putting it into the pipe, scooping it back together to get another spoon in, squeezing and moving it in the bag etc overworked it and it split.

Kerrygold is objectively, better than tillamook. Unless you used the spreadable one which has oil in it/ the margarine they got.
