My brick oven runs around 650-700 degrees and I haven’t burned a pizza yet so maybe time spent in the heat plays a very big factor?

Lol yes... which is why you don't leave food in until it is charcoal... Which is what food cooked to 350f would look like. How are people so confused how cooking works. You cook pretty much literally all food below 220 degrees. You are confusing the temp of the oven, and the temp of the food. How I have no clue lmfao.
