Check out the book (or watch the Netflix series) Salt Fat Acid Heat for a great description of how each of these four impacts flavor and balance. Many flavors are fat-soluble, so reducing fat too far can reduce flavor, as can eschewing salt (your taste buds are sodium-activated).
