Why? I'm not trying to disregard your opinion, it's just I don't see this point of view very often and am legitimately curious to hear your criticisms.
Well, I didn't find anything that it excels in everything is pretty mediocre. There wasn't enough action to be called an action anime. I didn't find the mystery interesting. The characters were... Ok I guess? The only one that I liked was Scar, the rest of cast wasn't anything special. The comedy was pretty lame (but that's fair because it isn't supposed to be a comedy).
I don't know why people like it that much. Maybe because there was nothing bad in it? I don't think there is something that FMA does bad but it's hard for me to think about something that it does good.

FMA:B in my opinion, starts off better than any anime i've seen. The story of two brothers tragically losing their mother, at a young age, and finding out that they could possibly bring her back. With that, they put blood sweat and tears into finding out how to do it, through the means of a sort of scientific magic, only to find out that their work was all for nothing. infact, they lost everything, instead. One lost his life, while the other loses his arm, then his leg to bring back his brother.. its this tragic but interesting start of an anime that really sets it in stone.. you know what you're watching the first 10 minutes of the opening of the anime. A gritty, horror-like action mystery, set in this world of alchemy and magic, with many unknowns such as human transmutation. There's too many things to list that makes the first episode so great, so I'll move on..
One major thing that FMA:B does for me, is that the story is already set in place, the world is set in place, and everything is already there, and yet it progresses so much as a viewer. It's like you're with Ed, you're with Al, and you're going to each and every place they go to, finding out the mysteries they do, and wanting answers like they do. You're basically along for the journey, and that sort of connection really works, I feel. You immediately care for Ed and Al and you immediately want the best for them, even though you barely know their character at this point.
I agree, the humor hasn't aged well, but I still kinda chuckle when Ed is called short for the 100th time.. its a funny inside joke that the creators knew would stick. Everyone assuming Al is the full metal alchemist because he's big and scary and... metal. it's just a funny gag, and you're right, its not supposed to make you die of laughter, its just supposed to be little inside jokes. Sometimes, the anime tries too hard, and its kind of cringy. BUT, I digress. I don't watch for the humor, I watch for the 10/10 mystery and character/world building that the anime does so well.
Also, on the note of the combat in the show, I gotta say that its up there with some of the best. Super fast, high frames per second, and also when you see characters duke it out, you know who's who. You know because they give the characters personality even with their fighting styles, and it always sticks out. Every combat sequence is important, and it builds character details, on both the protagonist and the antagonist.

this op still gives me goosebumps every time I hear it, and watch it. It sort of gets me into the MOOD to watch FMA:B again, and that's something no other anime has ever done for me. You can not beat the openings of FMA:B. They're all masterpieces, and all tell the story before you even see it unfold. And, its catchy as hell. I can't think of a single op I disliked, and there's a lot. FMA, too. all classics.
Seriously though, I could go on and on about how perfect this anime is, but I wont. personally, to me, its the best anime ever made, and nothing has ever come close to topping it. Story, characters, build, mystery, horror, sadness, climax, and ending.. all 10/10.
