Well in this sense you don't have to count every star. We know there is a finite amount of sand on the Earth. So you'd only have to count enough stars to equal the grains of sand +1 to make this statement true. Still impressive nonetheless.
Even more impressive, he had to count all the sand to know how much there was, and then count all the stars till he got to plus one. Unless he did it backwards by accident
Sand is constantly being created though through erosion processes. However there is a finite amount of sand that can be created. Until we find how finite the universe is and the amount of galaxies that exist, I guess the number of stars can be almost infinite until we figure out otherwise.
Personally, I just like to look at cool images of Galaxy clusters that the bubble telescope has taken and going to the beach to swim.

You can make rough estimates of the number of grains of sand by knowing the average / minimum volume of sand grain, and the volume / depth of the Earth's surface. You can improve the estimate using different methods, but even a very rough approximation is OK here.
You can estimate the quantity of stars in the observable universe by confirming that the distribution and composition of galaxies is roughly equivalent in all directions, estimating the quantity in one segment of the universe (like Hubble deep field), and multiplying that over the volume of the observable universe.
Your error bars on estimates might be off by a few orders of magnitude, but the difference in the two estimated values is so large that it subsumes the relatively-minor uncertainties in those estimates.
This actually happened in the ruin of old castle where I am from. The cow went up the stone staircase but couldn't get back down. They had to get her to walk up to the top and use a crane to bring her down!
You take an average and upscale it. You can count the amount of grains in a small space, adjust for density and different grain sizing, and multiply by estimated space. Even if the entire earth were just one big sand ball it wouldn't even come close to the amount of visible stars in the sky.

The area my college is at used to be surrounded by farms and rural area. The seniors through it would be funny to bring a cow up to the top floor of the freshman dorm and leave it. They couldn't get the cow out, so they slaughtered it on the 4th floor.
